Oysters with Finger Lime Granita, Gin and Pomegranate

Enjoy summer flavours with this adult-only refreshing entrée that heroes the sweet, salty and creamy flavours of the Pacific Oyster.

Serve:
Serves 2 as an entrée
Ingredients:
12 Oystersmiths Pacific oysters, served on the half shell
4 Finger limes, seeds scraped out
40g Ice cubes
1 tsp Icing sugar
1 tbsp Gin, plus extra to drizzle at the end
Zest of 1 lime
Pomegranate arils
Method
Using a blender or smoothie maker, blitz together finger lime seeds, ice cubes, icing sugar, gin and lime zest.
Working quickly, spoon a tsp of granita over each oyster.
Garnish with pomegranate arils and finish with another little drizzle of gin.
