Chinese Black Vinaigrette, Chilli and Mystery Bay Kelp Furikake
SYDNEY ROCK OYSTERS
This Asian inspired dressing will give your oysters a real flavour boost - kelp is known to help bring out the umami flavours of a Rock Oyster.
Oysters:

Serve:
Serves 2 as an entrée
Ingredients:
12 Oystersmiths Sydney Rock Oysters, served on the half shell
120mls Chinese Black Vinegar (Chianking – available in Asian grocery stores)
2 tsp brown sugar
1 tbsp sesame oil
1 birds eye chilli, finely sliced
1 tbsp Mystery Bay Kelp Furikake
Method
In one bowl, mix together the black vinegar, brown sugar. sesame oil and chilli until the sugar dissolves.
Carefully drizzle the mixture over each oyster.
Finish with a sprinkle of Mystery Bay Kelp Furikake.
